Named Bounty Hunter biscuits because they contain the ingredients of the Bounty Hunter punnet by Graze, I baked these for the office using two punnets I had saved especially. It was first time I’d tried the combination and I can safely say, it works! So much more exciting than normal chocolate chip cookies as well.
Makes 13
Ingredients
100g caster sugar
100g butter
1 egg
Half a teaspoon of vanilla essence
175g plain flour
Two Bounty Hunter Graze punnets*
100g butter
1 egg
Half a teaspoon of vanilla essence
175g plain flour
Two Bounty Hunter Graze punnets*
Method
· Grease two baking sheets and pre-heat the oven to gas mark 4
· Put the caster sugar and butter in a large bowl; cream with a wooden spoon
· Break the egg in a bowl and beat; add the vanilla essence
· Pour the egg mixture into the mixing bowl and stir; sift the flour and continue to stir
· Once the mixture is smooth, add the Bounty Hunter punnets and mix
· Use a tablespoon to transfer the mixture onto the baking sheet
· Flatten each biscuit with the back of a fork or spoon
· Put in the oven and bake for 15 minutes or until golden brown but soft in the middle
· Leave to cool on a wire rack and store in an air-tight container; eat within five days
*Of course if you don’t have the punnets to hand, I suggest a handful of chocolate chips, dried cranberries and desiccated coconut. Both punnets had a combined weight of 62g.
Happy baking!
